The Origins Of Maple Syrup
Pocahontas County locals have been tapping maple trees for generations, producing rich syrup and other tasty treats.
The history behind this craft mixes long-held tradition with a bit of mystery. Many believe Native American cultures in Northeastern North America were the first to recognize its potential. One popular story tells of a chief practicing his tomahawk throws when, by chance, he struck a maple tree. Sap began to flow, someone tasted it, and luckily for us, it was both delicious and nonfatal!
Today, maple trees are tapped by drilling a small hole into the trunk and inserting a spout to collect the sap. The sugar-water harvest usually lasts about six weeks, from February through March. As the season goes on, the sap darkens and deepens in flavor, creating the signature richness of real maple syrup.
